Quality varies enormously — look for higher percentages of grape must (40%+) and longer aging (3+ years). $10-40 per 250ml. Use for vinaigrettes, marinades, and reductions.
3. Balsamic Glaze (Crema di Balsamico)
A reduced, sweetened, thickened syrup designed for decorative drizzling and plating. Often contains added sugar, caramel, cornstarch, or xanthan gum. Convenient and visually appealing, but no substitute for true vinegar in a vinaigrette. $5-15 per squeeze bottle.
