Olio nuovo is olive oil at its most vibrant and alive. Pressed within hours of harvest (typically November in the Northern Hemisphere), it is cloudy, bright green, and bursting with fresh olive aromas. The flavor is intensely peppery — the high polyphenol content causes a characteristic throat-catching sensation. Olio nuovo is traditionally drizzled over bruschetta, beans (farro or cannellini), and simple soups to celebrate the new harvest. It is not meant for cooking — its flavors are too volatile and precious. Olio nuovo has a short shelf life; consume within 2-3 months for best quality.
