Tempering controls the crystallization of cocoa butter — the fat in chocolate that can form six different crystal types (polymorphs). Only Form V crystals produce the desired characteristics: glossy appearance, clean snap, smooth melt, and resistance to bloom. The classic tempering method involves heating chocolate to 115-120°F (melting all crystals), cooling to 80-82°F (forming Form IV and V crystals), then gently reheating to 88-90°F (melting the unstable Form IV, leaving only Form V). Professional chocolatiers can tell by touch and appearance when chocolate is properly tempered. Alternatively, 'seeding' tempered chocolate into melted chocolate introduces the right crystal structure.
