    Za'atar

A Middle Eastern spice blend made from dried thyme, oregano, marjoram, sesame seeds, sumac, and salt. Used extensively in Levantine cuisine as a seasoning for bread, meats, vegetables, and dips.

    In-Depth Explanation

Za'atar is both a wild herb (Origanum syriacum, a relative of thyme and oregano) and the spice blend that features it. Every family and region has their own za'atar recipe, but the essential components are dried herbs, toasted sesame seeds, ground sumac (for tartness), and salt. It is traditionally mixed with olive oil and spread on flatbread (manakish/manoushe), sprinkled over labneh and hummus, used to season roasted vegetables, and rubbed on grilled meats. Za'atar has become increasingly popular in Western kitchens as cooks discover its versatile, herbaceous, tangy flavor profile.
