    Maillard Reaction

    A chemical reaction between amino acids and reducing sugars that occurs during cooking, producing the complex brown flavors and colors in seared meats, toasted bread, roasted coffee, and baked goods.

    Discovered by French chemist Louis-Camille Maillard in 1912, this reaction is perhaps the most important flavor-generating process in cooking. It begins around 280°F (140°C) and produces hundreds of different flavor compounds — the reason a seared steak tastes vastly different from a boiled one. The Maillard reaction requires both protein and sugar, dry conditions, and sufficient heat. This is why patting meat dry before searing produces a better crust (moisture prevents the surface from reaching Maillard temperatures). Understanding this reaction explains why professional chefs obsess over high-heat searing, why bread forms a golden crust, and why coffee develops its complex roasted flavors.
