Umami was identified by Japanese chemist Kikunae Ikeda in 1908, who isolated glutamic acid as the compound responsible for the savory taste of dashi (kelp broth). The taste is triggered by glutamate and nucleotides (inosinate and guanylate) binding to specific receptors on the tongue. What makes umami powerful in cooking is synergy — combining ingredients rich in different umami compounds multiplies the effect. This is why Parmigiano-Reggiano (glutamate) with prosciutto (inosinate) tastes so extraordinarily savory. Tomato sauce with aged Parmesan. Mushrooms with soy sauce.
