    Parmigiano-Reggiano

    An Italian hard, granular cheese produced exclusively in the provinces of Parma, Reggio Emilia, Modena, Bologna, and Mantua. Aged a minimum of 12 months (often 24-36), it has a rich, nutty, crystalline character. Known as the King of Cheeses.

    Parmigiano-Reggiano's DOP regulations are among the strictest in the food world. The cheese must be made from raw cow's milk from the designated provinces, using only natural whey starter and calf rennet. Each wheel weighs about 80 lbs and is aged on wooden shelves in carefully controlled environments. At 12 months, inspectors from the Consorzio test every wheel by tapping with a special hammer — the sound reveals internal structure and quality. Wheels that pass are fire-branded with the Parmigiano-Reggiano mark. At 24-36 months, the cheese develops its signature crystalline texture (from tyrosine amino acid crystals), nutty-sweet flavor, and extraordinary umami depth.
