Real Tradizionale DOP comes in a numbered 100ml bulbous bottle with a regional certification. Aceto Balsamico di Modena IGP carries the IGP seal. Anything else is glaze, condimento, or generic balsamic.

Is expensive balsamic worth it?
If you'll actually use it as a finishing ingredient — drizzled on Parmigiano, strawberries, vanilla ice cream, or aged cheese — yes. Don't cook with tradizionale; the heat destroys what you paid for.
Can I use balsamic glaze in a vinaigrette?
It's not ideal — glaze is sweetened and thick, throwing off the acid balance. Use real IGP balsamic for dressings, and reserve glaze for plating.
