Instructions
Prepare the Rice
Cook sushi rice according to package directions. While still warm, fold in rice vinegar, sugar, and salt. Fan the rice as you fold to achieve glossy, well-seasoned grains.
Slice the Salmon
Using a very sharp knife, slice the salmon against the grain into 1/4-inch thick pieces. Keep the fish cold until ready to serve. Clean your knife between cuts for pristine slices.
Prep Accompaniments
Julienne the cucumber into thin strips. Slice the avocado. Prepare edamame if using frozen. Cut nori into thin strips using kitchen scissors.
Assemble the Bowl
Place seasoned rice in the bottom of two bowls. Arrange salmon slices in a fan pattern over half the rice. Add cucumber, avocado, and edamame in sections.
Add Final Touches
Add a small mound of wasabi and pickled ginger to each bowl. Sprinkle with sesame seeds and sliced scallions. Drape nori strips artfully over the arrangement.
Serve
Serve immediately with soy sauce on the side. Instruct guests to mix wasabi into soy sauce to their preference for dipping.
