    Prepare the Pastry

    Preheat oven to 400°F (200°C). Roll out puff pastry on a parchment-lined baking sheet. Score a 1-inch border around the edges without cutting through.

    Spread the Cheese

    Crumble and spread goat cheese evenly within the scored border. The warmth of the cheese will soften as it bakes.

    Arrange the Figs

    Quarter the figs and arrange cut-side up on the goat cheese in overlapping rows. Leave the border clear.

    Add Honey and Thyme

    Drizzle 2 tablespoons of honey over the figs. Scatter fresh thyme leaves across the tart.

    Bake

    Brush the border with beaten egg. Bake for 25-30 minutes until the pastry is golden and puffed, and the figs are slightly caramelized.

    Finish and Serve

    Drizzle with remaining honey and balsamic glaze. Scatter walnuts and a pinch of sea salt. Serve warm or at room temperature.

    Chef's Tips

    • Use ripe but firm figs—they should give slightly when pressed
    • Work quickly with puff pastry to keep it cold
    • The border will puff up beautifully if you don't press it down
    • Aged balsamic makes a significant difference in flavor
